I especially love CHOCOLATE!!!
Since I am eating a certain way, I am learning a whole new way to cook! In eating this certain way I am by no means counting calories. I want to be able to enjoy eating instead of having to write everything down. Been there, done that, and not going back again!
Anyways, this new food journey is going to be a blast. Can't find me? I'll be in the kitchen :) Hmmm... Cookin' Katie? If you are curious about what "eating a certain way" means... below is a list of what I am free of. It may look like a restriction, but really its freeing. Already, I have more energy, don't get that "I'm going to burst if I eat one more thing" feeling, I don't feel sick, I feel great! And the awesome part is I can eat even more food. YUMMMY! :) Eating really is one of the greatest hobbies out there.
I am:
Gluten free
Dairy free
Sugar free
Low carbohydrate intake
Low GI (Glycemic Index)
(low carb/low GI- I believe they are the same).
Don't worry some of you might think I switch languages on you or that I have to stick to eating only ICE. Its all ok. Still English, still eating a HUGE variety of foods. When first hearing about gluten free and low GI I had no idea what that meant or how to do it. No Carbs... Pasta, breads, the yummy foods... is my life over? NO WAY, its really just the beginning! There is a lot to be learned! For the little that has already been discovered, I will share this discovery with you. Oh and I will be explaining what Gluten free, Low GI and all that means in separate posts. COMING SOON: you will be able to click on the word "Gluten free" (for example) and it will bring you to a post where it describe what Gluten free means. :)
Discovering this new way of eating is going to be exciting! Can't wait to share recipes with you!! And I have the perfect one to start off with. ICE CREAM! It is "Katie safe"* and "Dad approved" meaning my dad likes it! Which is a HUGE DEAL! Want the recipe? Go back to the top of this post and under desserts you will find "Coconut Ice Cream." Click if you dare to venture into a post filled with milk and honey... well coconut milk and agave nectar that is. ;)
*"Katie Safe"-gluten free, dairy free, sugar free, low carb, low GI. Although, desserts may have a higher carb and GI intake. No worries, I am not going to hyperventilate over being perfect on my new way of eating. I simply want to eat healthier and not shove my face with cakes all day. I will not deprive myself of delicious desserts that are better for you than others out there :)

Cocoa/Date Treats
ReplyDelete1 cup chopped dates
1 cup raw cashews (raw best, roasted ok, not salted...but you can rinse or wipe salt off. If rinsed, pat dry & dry more in oven for a bit)
1/2 cup coconut (shredded/small flakes)
1/2 cocoa powder
1 Tablespoon almond butter (if you have it... or peanut butter should work, too)(Kris made some the other day, but you have to blend it for a long time before oils start making it smooth)
Mix in food processor (or blender, while in Israel)...cashew nut oils take awhile to make mixture moist. So, keep & keep mixing & blending!
Roll in balls & chill in refrigerator. Kristen & I fixed the other day & pretty good lil' snack! :)
